Ingredients: - 2 lbs chicken, cut into cubes - 1 cup Basmati rice - 2 onions, thinly sliced - 2 tablespoons ginger-garlic paste - 2 tablespoons garam masala - 1 teaspoon turmeric powder - 1 teaspoon cumin powder - 1 teaspoon coriander powder - 6 cloves - 4 cardamom pods - 4 tablespoons vegetable oil - 2 tablespoons lemon juice - 2 cups plain yogurt - 1/2 cup chopped cashews - 1/2 cup raisins - 2 tablespoons chopped fresh cilantro - Salt, to taste


Instruct 1. In a medium saucepan, heat the oil and add the cloves, cardamom pods, and onions. Saute until the onions are lightly golden. Tip: If you want more flavor, you can add garlic and ginger as well. 2. Add the chicken cubes to the pan and cook until it is lightly browned. 3. Add the spices (turmeric, cumin, coriander, garam masala) and stir until combined. Cook for another 2-3 minutes until fragrant. 4. Stir in the yogurt and lemon juice and simmer for 5 minutes. 5. While the chicken is cooking, wash and rinse the Basmati rice in a bowl of cold water. This helps to remove any extra starch, ensuring fluffy results. 6. Drain the rice and add it to a separate saucepan with 2 cups of water. Bring it to a boil, reduce heat and simmer for 8-10 minutes, or until the water is completely absorbed. 7. Add the cooked chicken mixture to the rice and stir to combine. Cover the pan and simmer for 10 minutes. 8. Finally, add the cashews, raisins, and chopped cilantro to the biryani. Stir and cook for another 5 minutes on low heat. 9. Serve the biryani hot with a side of raita or thick yogurt. Enjoy!
