Ingredients:
-1 cup besan/chickpea flour
-1/4 teaspoon turmeric powder
-1/2 teaspoon red chilli powder
-1 teaspoon cumin seeds
-A pinch of asafoetida
-A few curry leaves
-Salt to taste
-1/2 teaspoon ginger paste
-1/2 teaspoon garlic paste
-Oil for deep frying
Instructions:
- 1. Peel and slice the onions into half circles.
- 2. In a large bowl, mix together the besan/chickpea flour with turmeric powder, red chilli powder, cumin seeds, asafoetida, curry leaves, salt, ginger paste, garlic paste, and enough water to make a thick batter.
- 3. Heat oil in a deep fryer or large pan over medium heat.
- 4. Dip each onion slice in the batter, ensuring that it is evenly coated.
- 5. Carefully drop the battered onion slices into the hot oil and fry until golden brown and crispy.
- 6. Remove the fried onion pakodas from the oil and place them on a paper towel-lined plate to drain excess oil.
- 7. Serve hot with chutney or ketchup. Enjoy!
